Firm outside, creamy inside FIOR DI LATTE Fior Di Latte (mozzarella type, Italian ball cheese) A fresh cheese, firm outside, sift and creamy inside. Although also known as Water Buffalo Cheese, the Flor Di Latte is made with cow milk, with lower caloric level. It is offered in two types: Báccio Di Latte (Fior Di Latte - balls - 40 g (1.4 oz) Sliced, may be served with salads and au gratin dishes. Milk Pearls (Fior Di Latte - balls - 10g (1.40.35 oz) A small cheese, the size of a quail egg, commonly used in salads and desserts. May be served with marmalade, ice cream, or both. FRESH CHEESES Cheeses that are not subjected to maturation process, thus being called fresh, or Frescal. It is offered in two versions: mozzarella type and and pressed and fresh type. A curiosity! Mozzarellas are Italian, but went through changes when produced in Brazil, even receiving other names. From there comes the appetizer and grilling ball cheese. |
